The recipe for vegetable broth

Ingredients
-2 Carrots
-1 Fennel
-2 Onions
-1 branch of Celery
-1 head of garlic

Preperation
1.Peel the carrots and leave them whole. Cut off the ends of the fennel and celeriac and leave them whole.
2Cut off the ends of the onions and leave them whole, with the skin on. Cut the head of garlic in half through the center.
3.Add the water to the top, a good pinch of salt and a few peppercorns. Cook over low heat 45 min.
4Save the vegetables for later eating. Filter the broth through a cloth and pour into a jar.
5.Close the jar and sterilize for 1 hour at 100 °.

Beef broth recipe

Ingredients
-1 Carrot
-1 stalk of celery
-1 onion
-300 gr of paleron
-3 os a moelle

Preperation
1.Peel the carrots and leave them whole. Cut off the ends of the onion and celery and leave them whole.
2Cut the chisel into large pieces. Place the meat and the bones on a baking sheet and bake for 1 hour in the oven at 200 °.
3.Place everything in a saucepan wet with water at the level of the food and cook over low heat for 1 hour, taking care to skim.

Ingredients
-30 gr of fresh ginger
-10 kaffir leaves (or coriander)
-2 sticks of lemongrass
-1 shallot
-3 fish carcasses

Preperation
1Cut the ginger, lemongrass and shallot into slices.
2.Place the fish carcasses on a baking sheet and use a torch to burn the heads and bones.
3.Place all the ingredients in a saucepan and cover to cover.
4. Cook for 1 hour without covering over low heat.
5.Filter the broth with a cloth and pour into a jar.
6.Close the jar and sterilize 1 hour at 100 °
